This Santoku knife features a Granton edge, a row of scalloped indentations on each side of the blade, but not on the edge itself like a serrated edge. These indentations allow small pockets of air to form between the edge of the blade and the food product getting cut, protecting food from tearing or shredding as the Santoku knife moves smoothly to create clean, elegant cuts of meat or cheese, or for chopping or dicing fruits, nuts, or vegetables.

This knife should be hand washed only with warm water and cutlery should never be put into a dishwasher since the high heat and temperature changes can damage most knife handles and blades.
