The 337004 is a Paris Brest Mold from Matfer. This mold is constructed of a silicone aerated, knitted fiberglass fabric. The product is heat resistant to 350°F. Uniformly-sized choux are obtained on account of the shape cavities adapted for each preparation. The pre-formed molds allow for easy calibrating and shaping: it is not necessary to glaze or score the dough. The pastry tops will be even and smooth after baking.
