The Vulcan-Hart VRH88 Cook and Hold Oven is the perfect piece of equipment for roasting various kinds of meat and poultry. It is essentially a slow roaster that cooks at low temperatures for a long time and then holds temperatures to keep the meat warm and ready. The VRH88 is a Double Deck cook and hold oven, so you can roast 2 times the meat in the footprint of a single oven. For efficiency and optimal use of employee time, the Vulcan-Hart VRH88 allows you to put the product in the oven and walk away to work on other parts of the menu. While the VRH88 does its job, your staff is getting more prep done throughout the day. This is ideal for banquet halls or catering businesses that need to use every minute they can to get meals ready to serve as well.
For durability, the VRH88 is constructed from stainless steel, so it can stand up to the rigors of a busy kitchen plus resist the dings and scrapes associated with being moved around your kitchen, or from venue to venue for catering businesses. The included casters let you roll the VRH88 to wherever you need it to be. Locks keep the wheels in place when you have the unit plugged in. Note that this Vulcan-Hart cook and hold oven can roast meats at the low and slow temperature of 250ºF so you can place beef, pork, or poultry in at night and find the meats nicely caramelized and ready to be served in the morning. With the mechanical temperature control, you can set the temp and the amount of time needed for cooking, and then trust that the oven will switch over to holding temperatures so the product can rest while it's kept warm. The knob controls are easy to operate for both you and your staff. The 6 wire shelves (3 per oven) can support the weight of full pans of meat. Each oven can hold up to 8 sheet pans or 16 hotel pans, for a total of 16 sheet pans or 32 hotel pans at one time.
The doors of the Vulcan-Hart VRH88 are reversible in the field so you can configure it for your installation location. The magnetic action door latch keeps the door closed and heat inside the cabinet, saving you money and energy and preserving your food product. For busy restaurant kitchens, school or corporate cafeterias, or caterers, the VRH88 is the perfect way to roast foods and have them ready when you need them.
