Thanks to its moisture heating / proofing module, this full height cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch, and manage the moisture level at any temperature. The interior of this cabinet can accommodate up to 17 full size sheet pans, or 32 full size food pans. Temperature range is 80° to 200° F. You can control the humidity at any temperature inside the cabinet thanks to the moisture module control.
