Thanks to its moisture heating / proofing module, this full height cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch, and manage the moisture level at any temperature. The interior of this cabinet can accommodate up to 34 full size sheet pans. Temperature range is 80° to 200° F. You can control the humidity at any temperature inside the cabinet thanks to the moisture module control.
