Thanks to its combination heating / proofing module, this full height cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch, and manage the moisture level at low temperatures. The interior of this cabinet can accommodate up to 35 full size sheet pans. The solid door provides excellent temperature retention, locking in moisture and heat for maximum efficiency.
