Thanks to its removable combination heating / proofing module, this cabinet lets you quickly change from holding mode to proofing mode at the flip of a switch. This cabinet has fixed wire slides set on 3" increments and is capable of holding up to 14 full size sheet pans or 26 half size sheet pans. Plus, the easy-to-read digital thermometer, master on/of switch, and power indicator lights make it a breeze to operate.
