This fried food station operates with an electrical mechanical thermostat that is accessible and adjustable with tools, but ships factory preset for 190 degrees F and it can preheat to that temperature in approximately 10 minutes.

The CNH18LP is the drop-in 4-section 32 5/16" wide Crisp N Hold fried food station from Carter-Hoffmann that features a leakproof, welded food holding compartment and a side-mounted heating system for pass-through access. This drop-in fried food station fits into a countertop cut-out that is 30 1/4" wide and 20 3/4" deep.
There are forced air blowers in the ducts of the Crisp N Hold fried food station that directs hot air throughout the food compartment. Hot air discharges through circular openings in the bottom grate of the fried food station, then drawn back through the filter to maintain constant circulation to create a warm blanket of heat over the entire food zone.
There are 3 section dividers included with this Crisp N Hold fried food station that can create up to 4 food bay sections when all of the dividers are installed (3 1/2" high x 20 1/4" wide x 17 15/16" deep per section) for a total of 1271 cubic inches capacity in the entire food holding compartment.
The Carter-Hoffmann CNH18LP fried food station is an electric unit that operates at 120 Volts, 60 Hertz, 1-phase, and 15.1 Amps for 1820 Watts of power. The unit comes with a 6 ft power cord with a standard NEMA 5-20P plug. It is recommended that this unit be connected to a dedicated and protected circuit.
The unit is all stainless steel with a 24 gauge polished exterior and an 18 gauge interior. The bottom and sides of this fried food station are insulated with 5/8" thick high-density fiberglass. There is a removable bottom-mounted pan that collects oils and it can be safely cleaned separately in a dishwasher.
