Blodgett BCM-101E 35" Electric Half-Size Combination Oven / Steamer - 18 kW
This sturdy, electric combination Oven/Steamer has a stainless steel exterior and interior, a dual paned tempered viewing glass and cooks with pressureless steam, hot air, or a variety of combinations. Multiple cooking modes include: hot air, combi 1 (30-40% steam), combi 2 (60-80% steam), retherming, steaming, low-temperature steaming, and preheating. It can also be programmed with up to 50 different recipes, each with 10 different cooking stages per recipe.
It has the capacity for 8 hotel pans (12” x 20” x 2-1/2” deep) and includes 5 wire shelves per section. The optional rack system can hold 10 Gastronorm pans (12” x 20” x 2” deep).
Halogen lights provide excellent visibility and a door mounted drip tray helps prevent wet floors.
Safety and maintenance features include an automatic boiler flushing system, automated CombiWash cleaning, a two step safety door latch, a built in hand shower and a semi-automatic deliming system.
